Honey Soy or Soyaki Chicken Bottoms/pieces
4 chicken bottoms (cut in half if you want pieces)
Tsp salt
1/2 tsp pepper
1 TBSP garlic powder
1 TBSP onion powder
1 TBSP dark brown sugar
1/4 tsp ground clove
1/4 tsp nutmeg
1/4 tsp cinnamon
1/2 tsp ginger powder
1/2 tsp allspice
1/2 tsp coriander
1 tsp dried or French scallions or chives
1 cup chicken broth
For the glaze
1/2 cup honey
1/4 cup soy sauce
1 TBSP mirin
1 TBSP rice wine vinegar
Method of prep
Pre heat your oven to 350 degrees
Mix the dry spices together and rub the chicken pieces with the spice rub
Place chicken pieces in a Pyrex/roaster/ or 9x13 tin
Add chicken broth cover and bake for 1 hour
Place chicken pieces on a flat baking tray. Raise the oven to 400
Glaze the chicken pieces with your glaze. Roast uncovered in the oven until golden and crisp
